- 1 1/2tablespoons olive oil
- 400grams veal escalopes
- 300grams chestnut mushrooms, sliced
- 200grams oyster mushrooms, sliced
- 1 medium leek, sliced
- 1/3 cup white wine
- 3/4 cup chicken stock
- 400grams pappardelle, fresh
- 4tablespoons cream
Description
This creamy veal and mushroom pappardelle makes an elegant dinner party dish.
Method
Step 1 of 3
Heat half of the oil in a large, non-stick pan on medium high heat and cook the veal escalopes for 2-3 minutes on each side, remove from the pan and set aside.
Step 2 of 3
Add the remaining oil to the pan, add the leeks and mushrooms and cook for 8-10 minutes. Deglaze the pan with wine and cook for 2-3 minutes, until evaporated, stir in the stock and cook for 2 more minutes.
Step 3 of 3
Cook the pappardelle according to pack instructions, drain and divide between 4 bowls. Pour the cream into the pan, add the escalopes and juices and cook for 1 minute to warm through. Serve the veal on a bed of pappardelle.
