  • 400grams fettuccine

Description

Earthy truffle takes this simple mushroom fettuccine dish to the next level.

Method

Step 1 of 3

Bring a pot of water to the boil and cook the fettuccine according to pack instructions and drain, reserving a couple of tbs of starchy water.

Step 2 of 3

Heat the oil in a large pan on medium heat and cook the mushrooms for 8-10 minutes, add the garlic and spinach and cook for 1-2 minutes to wilt. Add the stock and cook for 2 minutes to evaporate. Stir in the cream and cook for 2-3 minutes to thicken.

Step 3 of 3

Tip the fettuccine into the pan and toss to coat, adding starchy water as necessary. Serve with parmesan and a drizzle of truffle oil to taste.
