- 1 cup leftover stuffing, crumbled
- 1/3 cup flat-leaf parsley, chopped
- 1/2 cup parmesan, freshly grated (to serve)
- 2tablespoons extra virgin olive oil
- 1teaspoons dried chilli flakes
- 1 lemon, rind grated
- 400grams spaghetti
- 2 slice prosciutto
- 2 cloves garlic, crushed

Method
Step 1 of 3
Cook pasta in a large saucepan of boiling, salted water as per packet instructions. Drain, reserving 1/4 cup of the cooking water. Return pasta to pan with reserved cooking water. Cover and keep warm.

Meanwhile, cook prosciutto in a frying pan over medium heat for 2 minutes each side. Transfer to a plate. Add half of the oil to the pan. Add stuffing crumbs, garlic and chilli and fry for 5 minutes or until crumbs are golden. Remove from heat and toss through parsley and lemon rind. Taste and season with salt and pepper.
Step 3 of 3
Break prosciutto into pieces. Toss through pasta with crumb mixture and remaining oil. Divide among serving bowls and serve with parmesan.
