  • 400grams simmer vegetables
  • 2 chorizo sausage (hot)
  • 3 cups water
  • 1 cup Italian Rosmarino pasta
  • 3teaspoons cracked fresh pepper
  • 1 pinch salt
  • 1/2 cup fresh pecorino (for serving)

Add paprika or chilli flakes if you like it hotter

Method

Step 1 of 5

Slice up all your hot or mild chorizo sausage.

Step 2 of 5

In a pot add a dash of oil and turn on high heat. Throw in the chorizo and Rosmarino pasta and stir well. Toasting the pasta now gives it more flavour later. I get my Rosmarino pasta from an Italian delicatessen. It’s the size of cucumber seeds.

Step 3 of 5

Add in the veggie mix, 3 cups of water, salt and pepper. Put lid on and cook for 10 minutes.

Step 4 of 5

The dish should have absorbed water but if it hasn't, take lid off and continuously stir for 5-10minutes, til water evaporates. It should have a risotto consistency.

Step 5 of 5

Turn off and serve with cheese on top.
