- 1 small onion, chopped
- 2tablespoons flat-leaf parsley, chopped
- 1 large zucchini, grated
- 250grams curly fettucine
- 400grams can diced tomatoes
- 1/2 cup parmesan, finely grated
- 1 cup passata
- 6 Italian-style sausages
- 1tablespoons olive oil
- 1/2 cup white wine
- 1 clove garlic, crushed

Method
Step 1 of 4
Cook pasta in boiling, salted water as per packet directions. Drain and reserve 1/3 cup cooking liquid.
Step 2 of 4
Heat oil in a frying pan over medium heat. Cook sausages for 6 minutes, turning frequently, or until golden on all sides. Transfer to a board and slice thickly. Cool.
Step 3 of 4
Add onion, garlic and zucchini to same pan and cook, stirring, for 5 minutes or until softened. Add wine, bring to the boil and simmer for 1 minute. Stir in tomatoes and passata. Simmer for 5 minutes. Add sausage slices and simmer for a further 5 minutes. Stir in pasta cooking liquid and parsley and season.
Step 4 of 4
Toss half the sauce with the pasta. Transfer to serving bowls, top with remaining sauce and serve with parmesan.
