- 100grams rindless bacon, sliced
- 2tablespoons parsley leaves (to serve)
- 1 small onion, finely chopped
- 1 pinch red chilli flakes (optional)
- 1/2 cup parmesan, grated (save half for later)
- 400grams spaghetti
- 1/2 bunch kale, stalks removed, leaves finely shredded
- 2 eggs
- 1/2 cup light thickened cooking cream

Method
Step 1 of 3
Bring a large saucepan of water to the boil. Meanwhile, whisk eggs, cream and parmesan together in a bowl and season with chilli or pepper.

Cook bacon and onion in a frying pan over medium heat for 5 minutes or until bacon is crisp and onion has softened. Add kale and cook, stirring continuously, until softened. Remove from heat.
Step 3 of 3
Add pasta to boiling water and cook, following packet directions, until al dente. Drain well, return to pan and place over low heat. Add egg mixture. Toss well to coat pasta and cook until sauce thickens. Toss in kale mixture. Top with grated parmesan and parsley. Serve.
