  • 300grams brussel sprouts, thinly sliced
  • 1/4 cup sliced natural almonds
  • 2tablespoons extra virgin olive oil
  • 1teaspoons lemon, rind finely grated
  • 1tablespoons lemon juice
  • 1/2 cup parmesan, finely grated (to serve)
  • 300grams fusilli pasta
  • 200grams streaky bacon, thinly sliced

Method

Step 1 of 4

Cook pasta as per packet instructions. Drain, reserving cup of the cooking water.

Step 2 of 4

Meanwhile, heat a large frying pan over medium heat. Add bacon and cook, for 8-10 minutes, stirring occasionally until crisp and golden. Transfer to a paper towel lined plate.

Step 3 of 4

Add half the oil to same pan, add Brussels sprouts and almonds. Cook over medium heat for 5 minutes, or until sprouts have softened and nuts are browned.

Step 4 of 4

Return bacon to pan, add lemon rind and juice and season with salt and pepper. Add drained pasta, a little of the reserved cooking water and remaining oil and toss to combine. Serve immediately topped with parmesan.
