  • 2 head broccoli, cut into florets
  • 1 long red chilli, deseeded, finely chopped
  • 1 large red onion, chopped
  • 1 lemon, juiced and rind finely grated
  • 1 cup parmesan, finely grated
  • 400grams penne rigate
  • 3 slice ciabatta loaf white, roughly chopped
  • 1/3 cup olive oil
  • 2 cloves garlic, crushed

Method

Step 1 of 3

Process bread in a food processor until coarse crumbs form. Heat 2 tbs of the oil in a frying pan over medium heat. Add breadcrumbs and cook, shaking pan occasionally, for 8 minutes or until golden and crisp. Add garlic and lemon rind and cook for 1 minute. Transfer to a bowl. Wipe pan clean with paper towel.

Meanwhile, cook pasta in a saucepan of boiling salted water following packet directions. Drain and return to pan.

Heat remaining oil in frying pan over medium heat. Add onion and cook for 3 minutes or until tender. Stir in chilli and broccoli. Add 1/4 cup water and lemon juice. Cover pan and cook for 2 minutes or until broccoli is just tender. Toss pasta with broccoli mixture and parmesan. Season with salt and pepper. Sprinkle with breadcrumbs and serve.
