- 475grams cauliflower mash

Prepare a Mediterranean-inspired feast for four in just 20 minutes with this pesto chicken and mashed cauliflower recipe.
Method
Step 1 of 4
Place chicken in a ceramic dish. Spoon over pesto and turn to coat.
Step 2 of 4
Heat 1 tbs extra virgin olive oil in a pan over medium heat. Cook chicken for 5 minutes on each side or until cooked. Transfer to a plate.
Step 3 of 4
Increase heat to high. Add vegetables to pan, then cook, stirring occasionally, for 5 minutes or until cooked.
Step 4 of 4
Heat mash according to packet instructions. Slice chicken. Divide mash among plates. Top with vegetables and chicken to serve.
