Description
Try this colourful and fuss-free Mediterranean vegetable bake with lamb meatballs for a midweek dinner the family will love.
Method
Step 1 of 4
Preheat oven to 240°C/220°C fan-forced. Place vegetables on a greased baking tray. Drizzle over 2 tbs extra virgin olive oil, then toss to coat. Bake for 20 minutes or until vegetables are golden and tender.
Step 2 of 4
Meanwhile, season mince, then roll level tablespoonfuls of mince into balls. Place meatballs on top of vegetables and bake for the last 15 minutes of cooking.
Step 3 of 4
Place couscous in a heatproof bowl. Add 1 1/4cups boiling water and stir to combine. Cover and stand for 5 minutes. Stir with a fork to separate grains.
Step 4 of 4
Heat gravy according to packet instructions. Divide couscous among bowls. Top with meatballs and vegetables. Drizzle with gravy. Serve.
