Need a quick and easy dinner recipe? This succulent baked chicken is a cinch to make and the whole family will love it.
Method
Step 1 of 4
Preheat oven to 240°C/220°C fan-forced. Place vegetables on a greased baking tray and drizzle with 1 tbs extra virgin olive oil. Toss to coat. Bake for 15 minutes or until golden and tender.
Step 2 of 4
Meanwhile, heat 2 tbs extra virgin olive oil in a large flameproof baking dish over medium-high heat. Cook chicken, turning, for 2 minutes on each side or until golden. Add tomatoes and bring to the boil. Bake for 10 minutes or until chicken is cooked through.
Step 3 of 4
Heat rice according to packet instructions.
Step 4 of 4
Stir vegetables into chicken and tomato mixture. Season. Divide rice among plates. Spoon over chicken mixture. Serve.
