  • 6 cup cooked rice, cold
  • 200grams cooked peeled prawns
  • 1/2 cup frozen peas
  • 1 red capsicum, seeded and sliced
  • 1 onion, chopped
  • 4 green shallots, chopped
  • 125grams can corn kernels, drained
  • 2tablespoons soy sauce
  • 250grams pork fillet, sliced
  • 4tablespoons peanut oil
  • 2 eggs, lightly whisked
  • 2 clove garlic, sliced

Method

Step 1 of 5

Heat 1 tablespoon oil in a wok over high heat. Add eggs and scramble them as they cook. Remove when just set. Add pork, in batches and cook for about 2 minutes until golden brown. Remove.

Step 2 of 5

Add another 1 tablespoon of oil to wok and add prawns and garlic, cook for 30 seconds and remove. Add onion and capsicum and toss over heat for 1 minute. Remove.

Step 3 of 5

Add remaining oil to wok and when hot add the rice, tossing to coat with oil and break up lumps. Keep turning and tossing over the heat for about 5 minutes until heated through. Add soy sauce and stir through well.

Step 4 of 5

Return egg, pork and prawns to wok with peas, corn and shallots.

Toss until reheated. Serve immediately with extra soy or chilli sauce.
