- 1teaspoons cornflour
- 300grams frozen spring roll pastry
- 1 carrot, grated
- 1 cup Chinese cabbage, shredded
- 2 green shallots, sliced
- 1tablespoons kecap manis
- 200grams chicken mince
- 4teaspoons vegetable oil
- 1/2 cup tinned water chesnuts, finely chopped
Description

Method
Step 1 of 5
Combine grated carrot, Chinese cabbage, green shallots, and water chestnuts, in a bowl. Heat 4 tsp vegetable oil in a frying pan.
Step 2 of 5
Add chicken mince and cook until browned. Stir in vegetable mixture and kecap manis. Cook for 2 minutes. Set aside to cool.
Step 3 of 5
Thaw spring roll pastry following packet instructions. Place a wrapper on a flat surface with one corner pointing towards you.
Step 4 of 5
Combine 2 tbs water and cornflour in a bowl. Brush edges of wrapper with cornflour mixture. Place 2 tbs chicken mixture 4cm above corner. Fold corner over filling and roll up, folding in sides as you go. Transfer to a tray and cover with a damp tea towel. Repeat.
Step 5 of 5
Deep fry spring rolls in vegetable oil for 2-3 minutes or until golden brown and crisp. Serve with chilli or soy sauce. Note: Kecap manis is a thick soy sauce sweetened with palm sugar.
