- 350grams chicken thigh fillets
- 250grams thick rice stick noodles
- 6 eggs, beaten
- 1 bunch shallots
- 6tablespoons lemon, juiced
- 1teaspoons garlic, crushed
- 2tablespoons fish sauce
- 1teaspoons sugar
- 2 1/2tablespoons olive oil

Method
Step 1 of 6
Cook the rice stick noodles as per package instructions.
Step 2 of 6
Beat the eggs well. Thinly slice the chicken and chop the shallots into small pieces.
Step 3 of 6
Mix well sugar and fish sauce.
Step 4 of 6
Heat the oil in a wok until hot. Add crushed garlic until brown then add chicken and fish sauce mixture. Stir constantly until chicken just slightly cooked then add shallots.
Step 5 of 6
Add the noodles, eggs and lemon juice to the mixture. Toss well until heated through.
Step 6 of 6
Serve with crushed peanuts (optional).
