- 2 bunches spring onions, finely chopped
- 1tablespoons Thai fish sauce, such as nam pla
- 8 lime, wedges (to serve)
- 2tablespoons demerara sugar
- 1 pinch salt
- 1 pinch freshly ground black pepper
- 300grams unsalted peanuts
- 1 handful fresh coriander, finely chopped
- 2 limes, juice
