- 2tablespoons sesame oil
- 2 cloves garlic, peeled and minced
- 5centimeters ginger, peeled and grated
- 4 spring onions, finely sliced, green tops reserved
- 3 large zucchini, spiralised
- 2 large carrots, spiralised
- 50grams beansprouts
- 400grams king prawns, cooked, peeled, deveined
- 1tablespoons fish sauce, reduced salt
- 1/2 bunch coriander, chopped
- 1 medium lime, juiced
- 30grams peanuts, salted, chopped
Description
This colourful veggie packed pad Thai is a fun way and tasty way to use your spiraliser.
Method
Step 1 of 2
Heat the oil in a large pan or wok on medium high heat and cook the garlic, ginger and spring onions for 4 minutes. Tip in the spiralised zucchinis and carrots and cook for 3 minutes.
Step 2 of 2
Add the beansprouts and prawns and cook for 2 minutes then stir in the fish sauce, half of the coriander and the lime juice. Serve with the remaining chopped coriander, spring onion tops and chopped peanuts on top.
