  • 4 eggs, scrambled
  • 400grams pad Thai noodles, cooked as per packet instructions
  • 2tablespoons sesame oil
  • 2 cloves garlic
  • 400grams chicken breasts, diced
  • 200grams mushrooms, sliced
  • 100grams bean sprouts
  • 2 scallions, sliced (for garnish)
  • 3tablespoons oyster sauce
  • 3tablespoons fish sauce
  • 3tablespoons tamarind
  • 1 medium lime, segmented

Description

This sweet and savoury fusion of flavours makes this dish packed with aromas and tastes.

Method

Step 1 of 5

Scramble the eggs and set aside.

Step 2 of 5

Cook the noodles as per packet instructions and then drain and set to one side.

Step 3 of 5

Heat up a large pan to a medium heat and then add the sesame oil and chicken and fry for 7 minutes while tossing.

Step 4 of 5

Fry the garlic and mushrooms for 5 minutes while tossing.

Step 5 of 5

Add the rest of the ingredients to the pan, fry while tossing for 3 more minutes before serving with lime segments to garnish.
