  • 600grams lean beef rump, trimmed, thinly sliced
  • 175grams baby capsicums, halved, thinly sliced
  • 1/2 cup satay sauce
  • 1/2 cup coconut milk
  • 2teaspoons soy sauce
  • 2teaspoons brown sugar
  • 2tablespoons vegetable oil
  • 1/2 cup salted peanuts
  • 1/2 cup Thai basil leaves
  • 1 lime, cut into wedges
  • 250grams cooked jasmine rice (to serve)

Description

Try this twist on traditional satay. Stir-fry beef strips with broccolini and Thai basil, then coat in a salty-sweet satay sauce for a quick, delicious meal.

Method

Step 1 of 5

Combine the satay sauce, coconut milk, soy and sugar together. Set aside. Spoon 1 ½ tablespoons oil over the beef and stir to coat.

Step 2 of 5

Place peanuts into the wok and place over high heat, stir fry until peanuts are toasted. Remove to a plate. Wipe wok clean and heat over high heat until very hot.

Step 3 of 5

Cook the beef, in batches, for 2 minutes or until browned. Remove to a clean plate.

Step 4 of 5

Add the remaining oil with the Broccolini® and Minicaps®, stir fry for 2 minutes. Add the satay mixture and bring to the boil. Return the beef and stir fry until warmed though. Remove from the heat.

Step 5 of 5

Divide between serving plates, scatter over the herbs and peanuts. Serve with lime and rice or noodles.
