- 2 bunches broccolini, halved crossways
- 750grams lean beef rump, trimmed, thinly sliced across the grain
- 2 cloves garlic, crushed
- 2tablespoons peanut oil
- 150grams snow peas, topped
- 1/3 cup hoisin sauce
- 250grams jasmine rice (to serve)
Description
Make this hoisin beef stir-fry when you’re looking for a quick and easy midweek meal. Enjoy with vibrant green broccolini and snow peas mixed in.
Method
Step 1 of 6
Toss the beef and garlic in a bowl.
Step 2 of 6
Heat a large wok over high heat until very hot. Add 1 teaspoon of the oil and swirl to coat the wok. Add one third of the beef.
Step 3 of 6
Stir-fry for about 1 minute, or until just cooked. Remove to a plate. Repeat with remaining beef in two batches.
Step 4 of 6
Add remaining oil with the Broccolini® and snow peas. Stir-fry for 1 minute.
Step 5 of 6
Add 2 teaspoons of water, cover with a lid and cook for 1 minute or until bright green.
Step 6 of 6
Un-cover, add sauce and return the beef. Stir-fry until hot and sauce is boiling. Serve over rice.
