- 3tablespoons canola oil
- 4 medium spring onions, sliced
- 2 cloves garlic, peeled and minced
- 5centimeters ginger, peeled and grated
- 1 large mango, stoned, peeled and sliced
- 450grams chicken breast, skinless, thinly sliced
- 400grams mixed stir-fry vegetables
- 2tablespoons soy sauce
- 3tablespoons lime juice
- 1tablespoons honey
Description
Ginger and sweet mango add tropical flavours to this quick and easy stir fry.
Instruction tip
Add some chilli flakes if you prefer a sweet and spicy stir fry.
Method
Step 1 of 4
In a large wok over a medium high heat, heat half the oil and add the chicken strips. Cook for 4-5 minutes and remove from the wok with a slotted spoon and set aside.
Step 2 of 4
Add the remaining oil, spring onions, garlic and ginger to the wok and cook for 30 seconds, then add the mixed vegetables and mango slices and cook for 1 minute.
Step 3 of 4
Add the chicken back into the pan, pour over the soy sauce, lime juice and honey and cook for 2 minutes until fully coated with sauce.
Step 4 of 4
Divide between four plates and serve immediately.
