Wok-Tossed Asian Greens with Pork

- 1tablespoons ginger, grated
- 100grams snow peas
- 1 bunch baby pak choy
- 1 bunch baby choy sum
- 2 shallots, sliced
- 1tablespoons oyster sauce
- 1tablespoons sesame seeds
- 350grams pork fillet
- 2teaspoons peanut oil
- 2 clove garlic, chopped
Method
Step 1 of 4
Prepare all ingredients before cooking. Slice pork fillet into 2cm pieces and set aside. Trim ends of choy sum and pak choy and wash well. Cut stems and leaves into 4cm lengths and keep stems and leaves separate. Top and tail snow peas.

Heat a wok over high heat until very hot. Add sesame seeds and shake wok over the heat for about 2 minutes until toasted. Transfer to a bowl. Return wok to heat.
Step 3 of 4
Add 1 teaspoon of the oil to wok and swirl to coat. Add half the pork. Sear over high heat for 1 minute until golden. Remove from wok, and repeat with remaining pork.
Step 4 of 4
Add remaining oil to wok with vegetable stems and snow peas. Toss for 1 minute. Add leaves, shallots, garlic, ginger, oyster sauce and 1 tablespoon water. Toss for 30 seconds until leaves are wilted. Return pork to wok with sesame seeds.
