  • 2 cloves garlic, crushed

  • 1teaspoons ginger, grated
  • 1/4 fresh pineapple, peeled, cored, sliced
  • 1 brown onion
  • 2tablespoons tomato sauce
  • 1tablespoons sesame seeds, toasted (to serve)
  • 2tablespoons soy sauce
  • 500grams frozen stir-fry vegetables
  • 400grams pork scotch fillet
  • 1/4 cup peanut oil
  • 375grams singapore noodles

Method

Step 1 of 5

Slice pork into strips. Season cornflour and add pork. Toss to coat and set aside.

Step 2 of 5

Combine sauces and vinegar in a jug. Soak noodles as per packet instructions. Drain.

Step 3 of 5

Heat 1 tablespoon of oil in a wok over high heat. Add frozen vegetables, garlic and ginger and cook, tossing frequently, for 5 minutes or until warmed. Transfer to a plate.

Step 4 of 5

Reheat wok. Add pineapple and onion. Stir fry for 4 minutes or until softened and lightly charred. Transfer to plate.

Step 5 of 5

Heat remaining oil. Add pork and stir fry until golden. Return cooked mixtures to wok. Stir in sauce. Bring to the boil and cook for 3 minutes or until heated through and thickened slightly. Serve stir fry with noodles and top with sesame seeds.
