- 1 red capsicum, deseeded and sliced
- 1 bunch choy sum, roughly chopped
- 1tablespoons ginger, finely shredded
- 1/4 pineapple, peeled, cut into chunks
- 2tablespoons oyster sauce
- 3 cups jasmine rice, steamed (to serve)
- 500grams pork fillet, sliced
- 3 garlic cloves, crushed
- 2tablespoons coconut oil
- 2tablespoons palm sugar

Method
Step 1 of 2
Heat oil in wok until smoking. Add the pork, garlic and ginger. Stir-fry until golden. Add oyster sauce and palm sugar and toss well to coat. Add capsicum, pineapple, spring onion and choy sum. Stir-fry for 1 minute.
Step 2 of 2
Serve stir-fry with jasmine rice.
