  • 2 cloves garlic, crushed
  • 1tablespoons fresh ginger, finely grated
  • 2 spring onions, thinly sliced
  • 1 bunch baby pak choy, halved
  • 400grams fresh ramen noodles
  • 2tablespoons oyster sauce
  • 375grams simple stir-fry rainbow vegetables
  • 3teaspoons sesame seeds, toasted (see tip)
  • 1 1/2tablespoons olive oil
  • 2tablespoons Chinese cooking wine
  • 2tablespoons sweet soy sauce
  • 600grams beef rump steak, fat trimmed, thinly sliced

Method

Step 1 of 3

Prepare noodles according to packet directions. Drain.

Step 2 of 3

Combine cooking wine, sauces and 2 tbs water in a small jug. Heat 2 tsp of the oil in a wok or large frying pan over high heat. Stir-fry half the beef for 2 minutes or until browned. Transfer to a bowl. Repeat with a further 2 tsp of the oil and the remaining beef. Remove and set aside.

Step 3 of 3

Heat remaining oil in same wok or frying pan over medium-high heat. Stir-fry garlic, ginger and red onion for 3 minutes or until softened. Add pak choy, rainbow vegetables, noodles, beef and sauce mixture. Stir-fry for 2 minutes or until vegetables are tender and heated through. Serve sprinkled with seeds and spring onion.
