  • 500grams chicken breast or thigh fillets, cut into strips

Description

Try this honey soy chicken stir-fry recipe for dinner tonight. It’s quick, easy and packed with colourful veg.

Method

Step 1 of 4

Place cornflour in a jug. Gradually blend with 1/4 cup water. Add soy sauce, honey and ginger and stir to combine. Set aside.

Step 2 of 4

To cook the rice, simply massage the pouch to separate the grains and place in the microwave for the required time as indicated on the packet. Set aside.

Step 3 of 4

Meanwhile, heat oil in a large non-stick frying pan or wok over a high heat. Add chicken and stir-fry for 2 minutes. Reduce heat slightly. Add carrot, broccoli and capsicum and stir-fry for 3 minutes longer, then add green onions and garlic and stir-fry for another minute.

Step 4 of 4

Stir honey soy mixture, then add to frying pan. Simmer, stirring for 2 minutes or until chicken is cooked through and vegetables are tender-crisp. Serve with rice and garnish with extra green onions.
