  • 1/4 bunch continental parsley, finely chopped
  • 1tablespoons drained baby capers, coarsely chopped
  • 1/4 cup extra virgin olive oil
  • 3 anchovies, chopped
  • 1 lemon juiced
  • 2tablespoons Woolworths basil pesto

Description

Infuse your almost-empty jar of pesto with a burst of flavour by adding a few simple ingredients for an incredibly versatile spicy, tangy dressing.

Prep tip:
Make the dressing earlier in the day and store it in the fridge. Remove the dressing 1 hour before using to allow it to come to room temperature.

Method

Step 1 of 1

Add parsley, capers, oil, anchovies and ¼ cup lemon juice to the pesto in the jar. Season and seal. Shake to combine.
