  • 1tablespoons extra virgin olive oil
  • 1 red onion, thinly sliced
  • 2teaspoons Gourmet Garden Cold Blended Garlic Paste
  • 2teaspoons harissa spice blend
  • 2tablespoons Gourmet Garden Lightly Dried Parsley
  • 800grams diced tomato
  • 4 eggs
  • 1 avocado, sliced
  • 100grams Danish-style feta, crumbled
  • 2 lemon wedges

Description

A Mediterranean delight, this easy baked egg dish delivers a cafe-dining experience in the comfort of your home.

Method

Step 1 of 3

Heat oil in a large frying pan over medium heat. Add onion and cook, stirring, for 4-5 minutes or until softened. Stir in garlic, harissa and 2 tsp parsley and cook, stirring, for a further 2 minutes or until fragrant. Add tomato and cook for 5 minutes or until sauce has thickened slightly.

Step 2 of 3

Using the back of a spoon, make 4 indents in top of tomato mixture. Crack an egg into each indent. Cover with a tight-fitting lid and cook for 8 minutes or until eggs begin to set.

Step 3 of 3

Top with avocado and feta. Sprinkle with remaining parsley. Serve with lemon.
