  • 3teaspoons parsley flakes (dried or fresh)
  • 3teaspoons rosemary (dried or fresh)
  • 1/2teaspoons salt (to taste)
  • 1teaspoons sweet paprika
  • 1/2teaspoons black pepper, freshly ground (to taste)
  • 5tablespoons extra virgin olive oil
  • 8 cloves fresh garlic
  • 1 medium red onion, cut into petals or thick slices

Description

Easy potatoes roasted with garlic and herbs.

Method

Step 1 of 4

Wash the potatoes well and cut into bite size chunks. Cut off any dirty or black spots, keep as much skin on the potatoes as possible.

Step 2 of 4

Place all the ingredients in a bowl and mix well.

Step 3 of 4

In a preheated oven, 220 fan forced, roast the potatoes for about 20-25 minutes until cooked to desired consistency. My roasting tray is small so I did it in 2 batches and I added the paprika in the second batch. You can alter the seasonings as you like.

Step 4 of 4

Once roasted to your liking, take out and enjoy. I made some Woolworths butterflied lamb and beetroot along with my potatoes.
