- 125grams butter, softened
- 1/2 bunch oregano
- 2kilograms baby white potatoes
- 2tablespoons olive oil
- 6 cloves garlic, bruised
Description
These crispy roast potatoes are the perfect side dish for roasted meats, like this Greek-inspired slow-roasted lamb shoulder.
Method
Step 1 of 3
Preheat oven to 200°C. Line a roasting pan with baking paper.
Step 2 of 3
Place potatoes into a large saucepan and cover with cold water. Bring to the boil over high heat. Reduce heat to medium-high and cook for 10-12 minutes or until just tender. Drain well and return potatoes to warm pan with butter. Toss to coat.
Step 3 of 3
Transfer potatoes to roasting pan and, using a potato masher, slightly squash each potato to break it up. Add garlic and oregano, drizzle with oil and season. Roast for 1 hour or until golden and crisp.
