  • 1 cup plain flour
  • 70grams unsalted butter
  • 6 baby fennel
  • 1 cup chicken stock
  • 1/2 cup parmesan, grated
  • 2tablespoons olive oil
  • 1 cup dry white wine

Method

Step 1 of 4

Preheat oven to 180°C. Trim bases and tops of the fennel bulbs. Halve fennel and slice.

Step 2 of 4

Heat butter and olive oil in a frying pan over medium heat. Add fennel slices and cook for 5 minutes until golden brown. Transfer to a 6-cup capacity ovenproof dish.

Step 3 of 4

Add flour to pan and stir for 1 minute. Gradually add chicken stock and wine and mix well until smooth. Cook until thickened, stirring occasionally.

Step 4 of 4

Pour sauce over fennel and scatter cheese over. Bake for 20 minutes or until golden brown.
