  • 1 clove garlic, crushed
  • 1 brown onion, chopped
  • 2tablespoons parsley, roughly chopped
  • 8 truss tomatoes
  • 3 rasher bacon, rind removed, finely diced
  • 50grams parmesan, finely grated
  • 4tablespoons olive oil
  • 2tablespoons thyme leaves
  • 2tablespoons pine nuts
  • 250grams crusty baguette, thickly sliced
  • 100grams mozzarella, finely diced

Method

Step 1 of 5

Preheat oven to 180°C. Put baguette in a food processor and process until roughly chopped.

Step 2 of 5

Heat 3 tbs of the oil in a frying pan over medium heat. Add onion and bacon and cook, stirring, for 3 minutes. Add garlic and pine nuts and cook, stirring, for 1 minute. Add breadcrumbs and cook, stirring often, for 5 minutes or until golden. Stir in thyme and parsley. Remove from heat and cool slightly.

Cut tops off tomatoes. Using a spoon, scoop out flesh and seeds and discard.

Stir mozzarella and parmesan into filling mixture and season.

Step 5 of 5

Spoon into tomatoes and cover with tops. Place on a baking tray and drizzle with remaining oil. Bake for 20 minutes or until tomatoes are soft. Serve.
