  • 2tablespoons coriander sprigs, finely chopped (to garnish)
  • 1 brown onion, sliced
  • 1kilograms potatoes
  • 1/2teaspoons garam masala
  • 1teaspoons ground turmeric
  • 60grams baby spinach leaves
  • 1tablespoons olive oil

Method

Step 1 of 3

Cut potatoes into 1.5cm chunks. Place in a large saucepan and cover with cold water. Bring to the boil over medium-high heat, reduce to a simmer and par-cook for 8 minutes.

Step 2 of 3

Meanwhile, place oil and mustard seeds in a frying pan. Heat over medium-high heat until seeds start to pop (about 1-2 minutes). Add onion and cook, stirring often, for 5 minutes or until starting to brown. Stir in garlic, turmeric and garam masala and season with salt. Cook for 1 minute. Add potato and 1/3 cup water, stir well, and simmer for 10 minutes or until potatoes are tender and water has evaporated.

Step 3 of 3

Remove from heat, add spinach leaves and stir through to wilt. Garnish with coriander and serve.
