- 6tablespoons olive oil
- 700grams white potatoes, peeled and cut into 2cm cubes
- 2 onions, finely chopped
- 1teaspoons chilli flakes
- 2tablespoons dry sherry
- 1 lemon, zest only
- 4 cloves garlic, grated or finely chopped
- 200grams chopped tomatoes
- 1 handful fresh flat-leaf parsley, chopped
- 1 pinch salt
- 1 pinch freshly ground black pepper
Method
Step 1 of 3
Preheat the oven to 200°C Heat half the oil in a non-stick frying pan, add the potatoes, and cook, turning frequently, over a medium-low heat for 20 minutes, or until starting to brown. Add the onions and cook for a further 5 minutes.
Step 2 of 3
Add the chilli, sherry, lemon zest, and garlic and allow to reduce for 2 minutes before adding the tomatoes and parsley. Season with salt and black pepper, combine well, and cook over a medium heat for 10 minutes, stirring occasionally.
Step 3 of 3
Add the remaining oil, place the whole lot in a shallow baking dish, and cook in the oven for 30 minutes, or until cooked. Serve hot with a selection of tapas dishes.
