  • 1 medium white onion, peeled and sliced
  • 2 cloves garlic, peeled and diced
  • 4tablespoons pesto
  • 40grams parmesan, grated
  • 1teaspoons cracked black pepper
  • 100grams cherry tomatoes, halved

Description

This nutty, cheesy and crunchy take on an Italian inspired dish.

Method

Step 1 of 5

Spiralise your zucchini and then drain the excess liquid in some kitchen paper.

Step 2 of 5

Heat up a non-stick pan to a medium heat with the oil and fry the onion and garlic for 2 minutes.

Step 3 of 5

Add the cherry tomatoes and fry for a further 2 minutes.

Step 4 of 5

Add the spiralised zucchini and fry while tossing for 4 minutes.

Step 5 of 5

Remove from the heat and combine fully with the pesto before serving with parmesan grated on top.
