  • 4 corn cobs (husks attached)
  • 1/4 cup cream cheese
  • 200grams garlic loaf (roughly chopped)
  • 1/2teaspoons chipotle seasoning
  • 100grams streaky bacon (roughly chopped)

Method

Step 1 of 3

Preheat oven to 200°C/180°C fan-forced. Peel back husks on corn cobs, then remove and discard silks. Pull up husks to cover cobs again. Place cobs on top shelf of oven and bake, turning halfway, for 1 hour or until husks have darkened.

Step 2 of 3

Meanwhile, place garlic bread and bacon in a food processor and process until fine breadcrumbs form. Transfer to a tray and bake on bottom shelf for the last 30 minutes of corn cooking or until breadcrumbs are golden and crisp.

Step 3 of 3

Combine cream cheese and chipotle seasoning in a small bowl. Peel back husks and spread corn with cream cheese mixture. Scatter bacon and breadcrumbs over corn to serve.
