- 5tablespoons extra-virgin olive oil
- 1 lemon, juiced
- 4 slices ham
- 450grams crusty cobb loaf
- 100grams pastrami
- 250grams low fat ricotta
- 125grams chargrilled capsicum
- 125grams chargrilled eggplant
- 125grams semi sun dried tomatoes
- 1/2 cup mozzarella, grated
- 200grams plain black kalamata olives
- 2teaspoons thyme, chopped
- 45grams anchovies
- 1 clove garlic, crushed

Method
Step 1 of 7
Cut top from Crusty Cob Loaf and set aside.
Step 2 of 7
Remove bread from inside, leaving a shell 2.5cm thick.
Step 3 of 7
Using a spoon, spread tapenade over insides and underside of lid.
Step 4 of 7
Lay 4 slices of ham over the base, top with chargrilled eggplant, semi sun-dried tomatoes, low-fat ricotta, sliced mushrooms, chargrilled capsicum, pastrami and finish with the grated mozzarella, layering each ingredient on top of each other.

Replace bread lid and wrap tightly in plastic wrap.
Step 6 of 7
Refrigerate overnight.
Step 7 of 7
Cut into wedges to serve.
