Description

I've always just roasted potatoes without much thought. Until I started making them this way and now I'll never go back. Enjoy these crunchy potatoes!

Method

Step 1 of 5

Start by washing and chopping your potatoes. I chose to keep the skin on and chopped them into thirds. Boil the potatoes with the bi carb soda for 20 minutes. You should be able to slide a fork into them easily.

Drain the potatoes and rough them around a bit.

Step 3 of 5

Add your potatoes to a baking tray. Drizzle with a generous amount of olive oil and season with salt. Bake for 25 minutes.

Step 4 of 5

After 25 minutes, remove them from the oven. Use a fork to squash them down a bit. Combine garlic and some olive oil. Use a pastry brush to brush them on top of the potatoes. I also added some rosemary leaves here too (optional). Put them back in the oven to bake for another 25 minutes.

After 25 minutes your potatoes should be amazingly crunchy and ready to go!
