Repurposed Potato Bake

- 2 cup leftover potato
- 1 cup bacon pieces
- 1 red onion, diced
- 6-8 sage leaves, chopped
- 2tablespoons blue cheese (optional)
- 2 clove garlic, crushed
- 1tablespoons olive oil
- 2tablespoons ricotta (or cream cheese)
- 1/2tablespoons butter
- salt and pepper (for seasoning)
Description
Use leftover mashed, boiled or baked potato for a super easy potato bake.
Method
Step 1 of 6
Preheat your oven to 190°C FF. Lightly grease an oven proof baking dish. Put the potato in a bowl and roughly mash it (or use leftover mashed potato). Stir the ricotta through the potato, add salt and pepper to taste then set it aside.

Heat the butter and oil over medium heat in frying pan. Add the onion, garlic and sage leaves, cook until the onion and garlic soften. The sage leaves will begin to get a little crispy.

Add the bacon pieces to the onions and cook until they begin to crisp up at the edges. Stir the onion and bacon mixture through the potato and ricotta until all ingredients are combined.

Spread the potato mixture into the prepared baking dish. Crumble the cheese over the top of the potato, use as much or as little as you like.

Place the baking dish in the oven and cook for about 15 minutes or until the top has become golden brown, you'll get a nice crunch around the edges too. Serve and enjoy.

I had extra boiled potato leftover so I've used these for the bake this time. Any leftover potato works well, I just give them a rough mash for this recipe. If you've got some fresh herbs they'd be perfect to use in this potato bake, make use of whatever you have in the veggie crisper.
