  • 2kilograms Woolworths boneless roast pork leg
  • 2tablespoons extra virgin olive oil
  • 1tablespoons sea salt flakes
  • 1/4teaspoons fennel seeds, crushed
  • 1tablespoons Dijon mustard
  • 1 small lemon, juiced
  • 1/3 cup maple syrup
  • 4 Packham pears, halved
  • 400grams green beans, trimmed, steamed
  • 1/2 bunch thyme, sprigs picked

Description

This succulent roast pork with ultra crispy crackling is next-level delicious when paired with caramelised mustard and maple pears. This main showstopper is one of the easiest ways to entertain.

Method

Step 1 of 4

Preheat oven to 240°C/220°C fan-forced. Grease a large roasting pan.

Step 2 of 4

Untie pork and pat dry with paper towels. Using a small, sharp knife, score rind, ensuring not to cut into meat. Re-tie pork with unwaxed kitchen string. Combine salt and fennel in a small bowl. Rub pork rind all over with oil, then rub with salt mixture. Bake for 30 minutes or until crackling is golden and blistered. Meanwhile, combine mustard, lemon juice and syrup in a large bowl. Add pears and toss to coat.

Step 3 of 4

Reduce oven to 180°C/160°C fan-forced. Place pears around pork and spoon over a little of the syrup mixture. Bake for a further 1 hour 30 minutes, basting pears every 30 minutes with remaining syrup mixture, or until pork is cooked.

Step 4 of 4

Slice pork. Serve with pan juices, pears, steamed green beans and thyme.
