Description

This is a quick and delicious roast for those who love lamb.

Method

Step 1 of 2

Preheat oven to 220°C/200°C fan-forced. In a food processor, pulse the olive oil, garlic, bread crumbs, flat leaf parsley, parmesan cheese, rosemary and salt. Rub the mustard all over the lamb rack and cover it with the bread crumb paste.

Step 2 of 2

Roast the lamb until it reaches internal temperature of 55 degrees Celsius about 20-25 minutes, Rest for 10 minutes before serving.
