- 3 cloves garlic, minced
- 25grams fresh herbs, chopped
- 2teaspoons coarse salt, minced

- 1teaspoons ground coriander
- 1 lemon, zest and juice

Description
This Moroccan spiced lamb roast is best served with couscous.
Method
Step 1 of 2
Preheat oven to 220°C/200°C fan-forced. In a small bowl mix the olive oil, garlic, herbs, salt, pepper, lemon juice, lemon zest, cumin and coriander. Rub it all over the lamb rack.
Step 2 of 2
Roast the lamb until it reaches internal temperature of 55°C about 20-25 minutes. Rest for 10 minutes before serving.
