  • 1.60kilograms free range chicken
  • 1 lemon, finely grated rind
  • 1 pinch black pepper
  • 1/4 cup extra virgin olive oil
  • 1 pinch salt (for seasoning)
  • 1/4 cup mint, roughly chopped
  • 2 cloves garlic, crushed

Method

Step 1 of 4

Preheat oven to 200°C or BBQ oven to medium.

Step 2 of 4

Place chicken onto a chopping board, breast side down. Using a sharp knife or poultry shears, cut along both sides of the back bone, remove and discard. Turn chicken over and make a few slashes through skin and into meat. Place chicken into a large heatproof ceramic dish.

Step 3 of 4

Combine oil, lemon rind and juice, oregano leaves and garlic in a bowl. Pour over prepared chicken. Season with salt and pepper. Stand for 30 minutes if time allows.

Step 4 of 4

Roast chicken for 1 hour or until cooked through. Stand for 10 minutes before cutting into serving size pieces. Put chicken pieces onto a platter and drizzle with pan juices. Serve
