- 1/4 cup malt vinegar
- 1/4 cup mild curry powder
- 3 bay leaves
- 2 green capsicums, diced into 2cm squares
- 2tablespoons ginger, grated
- 2 red onions , cut into 3cm wedges
- 24 apricots, diced
- 1/4 cup apricot jam
- 1kilograms lamb, diced
- 4 cloves garlic, finely chopped
- 12 bamboo skewers

Method
Step 1 of 5
To make marinade, combine all ingredients in a large bowl. Add lamb pieces and toss to coat. Refrigerate overnight.
Step 2 of 5
Soak apricots in hot water for 30 minutes or until plump. Drain and set aside.
Step 3 of 5
Thread lamb, green capsicum, red onion wedges and apricots on skewers. This recipe makes 12 skewers. Keep marinade aside for basting.
Step 4 of 5
Heat and oil BBQ or chargrill plate to medium. Cook skewers, brushing with marinade and turning them occasionally for 15 minutes or until browned and cooked through.
Step 5 of 5
Serve the skewers with warmed pita, salad and mango chutney.
