  • 1 cup coriander leaves and stalks, firmly packed
  • 1 cup parsley leaves and stalks, firmly packed
  • 1/4 cup extra virgin olive oil
  • 1tablespoons ground paprika
  • 2tablespoons red wine vinegar
  • 1 lemon, zested
  • 1 lemon, juiced
  • 2tablespoons olive oil
  • 1teaspoons sea salt flakes
  • 1/3 cup oregano leaves, firmly packed
  • 1kilograms chicken thigh fillets, cut into 3cm pieces
  • 4 cloves garlic, crushed

Method

Step 1 of 3

Combine garlic, paprika, vinegar, zest, oil and sea salt flakes in a large bowl. Add chicken, turning to coat. Cover and chill for at least 2 hours or overnight.

Preheat a barbecue grill or chargrill pan over medium-high heat. Thread chicken evenly onto 8 skewers. Cook skewers for 8-10 minutes, turning and brushing with marinade, or until browned and cooked through. Transfer to a plate and set aside to rest, lightly covered with foil, for 5 minutes.

Meanwhile, to make the herb sauce, place parsley, coriander, oregano, oil and juice of 1 lemon in a small food processor and process to a smooth paste. Season to taste. Serve chicken skewers drizzled with herb sauce.
