  • 1 small pineapple, peeled and sliced
  • 1 large red onion, cut into thin wedges
  • 4 chicken breast fillets
  • salad greens (to serve)
  • 1/2 cup Italian dressing
  • 1tablespoons olive oil

Method

Step 1 of 3

Cut each chicken fillet in half through the centre, forming 2 thin slices. Place into a shallow ceramic dish. Add dressing and turn to coat well. Set aside for 20 minutes.

Step 2 of 3

Heat a barbecue chargrill and hot plate on medium heat. Cook chicken for 2 minutes on each side or until charred and cooked through. Cook pineapple on chargrill for 1 minute on each side.

Step 3 of 3

Meanwhile, heat oil on a hotplate. Add onion wedges and cook, stirring often until golden and tender. Layer chicken, pineapple and onion onto plates, repeating layers. Drizzle with a little extra dressing. Serve with salad.
