  • 2 large lime, 1 rind finely grated and juiced, 1 cut into wedges
  • 2tablespoons honey
  • 1/3 cup salt-reduced soy sauce
  • 2tablespoons chives, finely chopped
  • 2tablespoons brown sugar
  • 1kilograms chicken boomerang wings

Method

Step 1 of 3

Combine soy, sugar, honey and tomato sauce in a bowl. Place chicken wings in a large snap-lock bag. Add marinade, seal bag and shake to coat chicken. Marinate in refrigerator for at least 2 hours or preferably overnight.

Step 2 of 3

Combine butter, chilli, lime rind, lime juice and chives in a bowl. Season with salt and pepper. Spoon mixture onto a sheet of baking paper and form into a 10cm log. Roll up, firmly twisting the paper ends to secure. Refrigerate for 30 minutes or until firm.

Step 3 of 3

Preheat oven to 200°C. Line a baking tray with baking paper. Remove wings from marinade and place on prepared tray. Bake, basting every 15 minutes, for 45 minutes or until golden and cooked through. Top with slices of chilli, chive and lime butter. Serve with lime wedges.
