- 250milliliter thick mint sauce
- 2 bunch baby carrots, trimmed
- 1tablespoons honey
- 1/4 cup natural sliced almonds
- 1kilograms garlic & rosemary lamb leg mini roast
- 2tablespoons olive oil
- 1 pinch sea salt flakes
- 500grams mini potatoes

Method
Step 1 of 4
Preheat oven to 180°C. Cook lamb as per packet instructions. Prepare potatoes in microwave as per packet instructions. Cool.
Step 2 of 4
Using the palm of your hand, crush the potatoes and place on a baking tray. Drizzle with 1 tbs oil. Season with sea salt flakes. Roast for 10 minutes.
Step 3 of 4
Add carrots to tray and drizzle with remaining oil. Cook both vegetables for a further 25 minutes until golden and crisp. Remove potatoes and transfer to a warm plate.
Step 4 of 4
Drizzle honey and sprinkle almonds over carrots and cook for 4 minutes. Slice lamb and serve with potatoes, carrots and mint sauce.
