  • 1 pinch salt (for seasoning)
  • 2tablespoons sour cream
  • 200grams green beans, cooked (to serve)
  • 5milliliter virgin olive oil spray
  • 1 lemon, rind finely grated
  • 1tablespoons mustard
  • 750grams baby potatoes
  • 900grams leg lamb
  • 2tablespoons dill, finely chopped

Method

Step 1 of 5

Preheat oven to 200°C. Line a large tray with baking paper.

Place potatoes into a saucepan and cover with water. Bring to the boil over high heat. Reduce heat and simmer for 10 minutes or until just tender. Drain and cool. Place on tray.

Using the palm of your hand, squash potatoes. Spray with oil and sprinkle with salt. Bake for 45 minutes or until crunchy.

Meanwhile, combine sour cream, dill, mustard and lemon rind in a bowl. Season with salt. Spread mustard mixture over lamb in foil tray. Transfer to oven and roast for 35 minutes for medium rare or until cooked to your liking. Transfer to chopping board and cover to keep warm. Stand for 10 minutes to rest meat.

Slice lamb and serve with smashed potatoes and green beans.
