10 Ingredients

  • 500grams kipfler potatoes, scrubbed and halved lengthways (or red rascal)
  • 1 bunch spring onions, trimmed and halved lengthways
  • 1.70kilograms leg of lamb
  • 2tablespoons Extra Virgin Olive Oil
  • 2teaspoons smoked paprika
  • 1 lemon, cut into thin wedges
  • 1 pinch pepper (for seasoning)
  • 5 sprigs fresh oregano
  • 2 garlic cloves, crushed
  • 1 pinch sea salt ground (to taste)

Method

Step 1 of 8

Preheat oven to 200°C.

Step 2 of 8

Place lamb into a large roasting pan.

Step 3 of 8

Combine garlic, paprika and 1 tablespoon olive oil in a small bowl. Rub paprika mixture over lamb. Season with salt and freshly ground black pepper. Cover with a sheet of baking paper.

Roast for 45 minutes.

Step 5 of 8

Combine potato, spring onion, lemon, oregano and remaining olive oil in a large bowl.

Step 6 of 8

Place potato around lamb and roast for 1 hour.

Transfer lamb to a chopping board, cover and stand for 10 minutes before slicing.

Step 8 of 8

Serve lamb with vegetables and drizzle with pan juices.
