- 3 carrots, chopped
- 2 leeks
- 2 onions, quartered
- 2tablespoons honey
- 1 cup chicken stock
- 2 butterflied lamb roast with garlic and herbs
- 2 sprig lemon thyme
- 2 sprig rosemary
- 4 cloves garlic
Method
Step 1 of 4
Preheat oven to 200°C. Finely chop garlic and herbs. Spread over the meaty side of the lamb. Roll up and tie firmly with kitchen string.
Step 2 of 4
Place vegetables in a large baking dish. Sit lamb on top. Pour stock into base of dish. Roast for 45 minutes.
Step 3 of 4
Drizzle honey over lamb and cook for a further 10-15 minutes for medium or until cooked to your liking.
Step 4 of 4
Remove from oven. Cover loosely with foil. Rest lamb for 15 minutes before slicing.
